I have over 3,000 games on Ezreal and Orianna bot cannot create a chart for my mastery score.

You'll be able to see the chart online, but not in Discord unfortunately. It is a known issue and will either be fixed or completely removed in Orianna v2.

To see the chart online, you can @Orianna Bot chart with a champion that you have a few games on. Then click the title link in the resulting chart to go to the web interface.
