See title. Hyperlinks can be changed but not added or removed. Maybe this behaviour is caused by this field being mandatory in this case. Screenshot:

Don't think it's because of it being mandatory. When manually creating a form with EMAIL_ARRAY/HYPERLINK_ARRAY, there's never an option to add more than 1 field:
