Make category single valued in denormalized schema #472

Single valued category for Solr reflects our data and usage in Solr and through the api & UI. If we find that we need a closure field, we should add category_closure.

This is done (with making subject_category and object_category single valued hanging out there in a monarch-py PR waiting to be part of the next KG build)
