Docs: Directories and files

Overview

It seems like it'd be a good idea to have some developer docs about:

• [ ] I. mondo-ingest

  • [ ] 1. each of the directories in mondo-ingest as well as
  • [ ] 2. all of the different kinds of output files
  • There will be some overlap with existing workflow documentation that can be found in docs/developer/workflows.md and the makefile help command/goal.
  • [ ] 3. which output files are reviewed by curators

• [ ] II. All the ingest repos:

  • [ ] 1. How the outputs and/or releases of each repo ultimately find their way into mondo.

@twhetzel Just adding you to this since this is something we were going to do together, but we can also leave this as just my issue too. The goal was also to build some redundancy w/ you, but I think since we've opened this issue you've become much more familiar with mondo-ingest as well. Moved priority from medium to low.
