Update box and self-update to actual versions #292

We we using old box 4.3.8 (to build the moodle-plugin-ci-phar file), and laravel-zero/phar-updater 1.1.1 (to make the selfupdate command to work) in order to support PHP 7.4.

This issue is about to bump to actual versions support PHP 8.1 and up.
