How would one actually edit the colours/pallette? #371

I like the theme but I would like to change the default text colour (in dark mode, which is white-ish) to something else. How do I do this/is it possible to do this?

I would also like this. The whites are way too white for me. I would like something off-white. It gives me an headache.
