Which time sync method did you use? Which time server did you use? Once date is set, the only way to go back to 1970 is to reboot followed by a failed time sync. Next time you see a date reset to 1970, please check the device uptime to verify this.
Why did your device reboot? Is your device connected via wifi? Do you have poor wifi connectivity? Why did the time sync fail? Is it because of poor wifi connectivity? That's where I would start troubleshooting.
