Just a matter of subbing egg, probably with applesauce

this turned out alright subbing refined coconut oil for butter and 1 tbsp almond milk for egg plus a little extra baking soda, but I think I could get better results.

there's one on PPK but it's more "ginger molasses cookie" and less the chewy rollout cookie I like.
