Create ui-testing.md #111

Short primer doc on describing the flow of apps/technologies we use for UI-testing on Android. Let me know if the flow diagram makes sense here as I'm limited to simple ASCII (waiting on the roll-out of Mermaid for better flow support on Github https://github.com/github/roadmap/issues/372)

Thanks for the doc! It very clearly explains our test infrastructure. Carrying forward the r+ from isabelrios.

Should we link this from android/testing.md or another doc to increase discoverability? (in a follow-up?)

I can do that in a follow-up. I'll be adding this doc linked from the markdown generated on test results in Github checks (e.g, here).
