This is an (intentional?) feature of Firefox 89+ (Proton). Supposedly the "background tab text color" is chosen such that there is a good enough contrast with the background color. That means that if you choose a light/white "background tab text color", that the "background color" is expected to be somewhat dark, and that the dark theme is used for the menu.
Can you temporarily set browser.proton.contextmenus.enabled
to false at about:config
?

Thanks for the reply. Disabling browser.proton.contextmenus will only work for 40 days since Mozilla will disable this option on about:config in the next release. Hopefully there will be a permanent fix from the link you showed. Thanks.
If I pick "white" for Background Text Color, everything else's background turns black for no reason (pictures attached). If I pick another color (as long as it it's more darkish) everything else's background turns to the same color as the Toolbar Color (as it should be). Picking white for Background Text Color shouldn't change everything else's color
