update to include 2021 season ngs data #2

Updates to allow new NGS data to pull after August 31st 2020

Thanks for this! The ngs data has been moved into it's own repo in the nflverse https://github.com/nflverse/ngs-data

I planned to let this online for the upcoming season but forgot to update the scripts.

I am going to close this as I have stopped running the NGS script in this repo. The readme notes that and links to the new repo
