Production logging #222

Closes #219

Adds logging to file which can be configured in settings. Was having trouble diagnosing issues with sensors not downloading logs when run in production mode and thought that this would be helpful

debug-logging

Disabled by default, and the option to log all console output to the logfile is also off by default. The other settings, such as log rotation, are defaults.

Thanks for looking it over @josh-griffin - much appreciated, though I wasn't expecting it! There's still something playing up.. but will find it 🤞
