Remove remaining references to IRC #166

As discussed in https://github.com/mumble-voip/mumble/discussions/5041 IRC is deprecated in favor of Matrix.

We could also make the Matrix room a link as #165 did.

Changed the link as suggested. Also noticed there were some more occurances.
