Parameterize models #16

Addresses issues #14 and #15.

Parameterizes the creation of word embeddings and UMAP visualizations. Lists of parameters can be defined in the Snakefile.

For now, I selected several example parameters—these can be modified at a later date.

Additionally, this pull request removes the separate multiscale embeddings and considers only the institutional embedding for analysis and visualization.

hey could you remove the PROJ_HOME_DIR file from the repo?
