You can do grace note chords. If you do either Shift + note or Alt + interval on a grace note, you will get a grace note chord. It works just the same way as turning a single regular note into a chord.

I couldn't find any support on those! I guess I wouldn't have found anything explicitly searching for inputting grace note chords though. Thank you so much!

Will this include ability to enter grace note pitches via keyboard/MIDI keyboard? The current behaviour when you select a grace note and try to change its pitch via the keyboard or MIDI input is very odd.
Ability to change notes between grace notes and standard notes would also be pretty handy, e.g. if you originally notate a complex run metrically then decide it's overly fussy and grace notes would be more appropriate.

Your idea
Grace notes currently can only receive their own articulation/ornaments, pitch, and can only be placed sequentially. This is problematic when you want different pitches played at the same time inside a grace note. If grace notes were made to be independent, things like having Ottava Alta and chords could be applied inside grace notes as well.
