Another relevant link: https://developers.google.com/search/docs/advanced/appearance/overview. This seems to describe every option there is for Google.
My suggestion is to limit ourselves to Google and Facebook for now and make links to every page look as compelling as possible on these platforms. This may, e.g., include wording such as "Help Ukraine via art" and showing previews of the artworks.
My understanding is that the task is actually comprised of two parts: 1) deciding what that is that we want people to see, and 2) making the platforms actually display it.
I can definitely take 2). I could also take 1) if no one else more experienced in this kind of things is ready to. After the initial iteration is done and we see the results in action, some alterations may definitely be applied.

Here is what has been done in https://github.com/museum-of-war/web/pull/69:
title
and description
standardized across pages with the new PageHead
component.og:title
, og:description
, and og:image
has been added. Here is what has not been acted upon:
Still blocked: waiting for SEO descriptions for pages...
We need to improve metadata for better parsing:
Metadata can also be added for Warline and auction items.
