adjusts chapter 09 text encoding to MEI v4 #159

Mostly based on the findings of @margrethesb, many thanks đź‘Ť . Probably, this fixes #88. Glad if someone had a brief look. In the long run, we may also want to come back and see where <titlePage> is handled best: Here in 9.1.6.2, in 8.1.3, or in the metadata. Wouldn't delay things for this, though.

A single person checking that everything compiles as expected should be sufficient…
