profiles that trigger by temp vs time Eg, run @ 180 till probe 1 = 135, then profile 2 till target IT is achieved.

using each Profile to cook by probe temp. Profile 1-180°, cook to probe temp 100° Profile-2, 225°cook to probe temp,140’ Profile 3-350’, cook to probe temp 170°. smoke when done.
