Move to Almalinux

• Stability: Since we use a whole lot of redhat tech (ansible, podman, systemd, firewalld) stability might be enhanced by moving to a RHEL-compatible distro
  • For example https://docs.ansible.com/ansible/latest/collections/ansible/posix/firewalld_module.html states: "Not tested on any Debian based system."
• Security: RHEL seems to have better SELinux support (#25 )

Decide between:

• Rocky
• Alma
• CentOS Stream
