ci: add more up to date n0 ci workflow #52

Nice to have this run on multiple architectures. Especially once I add notoriously arch dependent stuff like local IPC in https://github.com/n0-computer/quic-rpc/pull/48

~I disabled the minimal-crates test since whatever I do I get a confusing build error on CI.~
