Hotfix: Fix Python 3.12 Packages #359

This corrects the issues surrounding Python 3.12 packaging. Note: this PR is a hot-fix on top of v2.0.1. PRs #357 and #358 bring the same changes to the mainline development.

Should we rename the branch to release/v2.0.2? We will also need to update the version stamp and regenerate the docs on that branch.
