Easy / Medium / Hard difficulty icons in game screen

I think we might need explicit EASY to left and DIFFICULT to right of the icons? Or a numeric difficulty?

Removed choose your difficulty text and increased the toggle size to allow for the text EASY, MED and Hard to be centred in circles
