You are correct. I believe it would be very useful. However, I don't have a
device that Firefox Mobile will run on. If I get one, I will see if I can make
the extension work with it.

firefox mobile have desktop version, you can develop with it.
there are linux and windows version can download at server
http://ftp.mozilla.org/pub/mozilla.org/mobile/releases/10.0/
And if need I can test it on my android device.

I'm provisioning some virtual machines to try and see if I can get it running.
Looking at https://wiki.mozilla.org/Mobile/Fennec/Extensions, it seems like the
biggest challenge will be in the user interface. How do I present the UI to the
user? How do I allow the user to toggle when screen real-estate is so precious?
And does Fennec even store its color profiles the same way that Firefox does?
A reasonable first cut might just use hard-coded color profiles with reasonable
default settings and no actual UI. Either a gesture or a toolbar button could
toggle. I don't know how easy it is to tie into Fennec's gesture API, but it
would be difficult to test on the desktop. For the first attempt, a toolbar
button should be easiest.
I will work on this when I have time, assuming I can get Fennec up and running
somewhere. I might have to borrow a Windows box :(
