Label `org.opencontainers.image.source` #137

Would be nice if images are labeled using org.opencontainers metadata, to improve integrations like renovate.

ideally commits like https://github.com/nats-io/nats-docker/pull/136 also would link to eg. https://github.com/nats-io/nats-server/compare/v2.10.8...v2.10.9?w=1 so we can observe changes at higher level as well

this is not a blocker, we're just super lazy :)
