Fix releases, update docs #165

Should address https://github.com/nautilus/gateway/issues/157. We'll know for sure once the release automation runs on main.

Thanks @AlecAivazis! It looks like we have a required CI check that is no longer running.

I don't have enough access, so would you mind updating the branch protections to use the new check names?
