Adds a link to the new Metadata Extractors docs on the Scanner.Extractor configuration option content/en/docs/Usage/configuration-options.md
I went through all the audio formats and tested them and kept notes. We could consider adding specific information about what is/isn't supported - but I wasn't sure if we want to be documenting external dependencies and what they support.
Also, it might be nice to enumerate out all the supported audio coding formats/file types somewhere in the docs, generally.
