Some options:

wt. standard deviation of select properties
wt. variance, over suite of soil properties
Shannon entropy, computed from taxonomic proportions (which level? subgroup ?)
a newly developed functional (?) index of variability; linked to restrictions

Shannon entropy for order, suborder, great group, and subgroup would be quite useful for conveying taxonomic complexity within each grid cell. This will require casting long-to-wide or an array aggregate function.
