Update low priority `near-examples` config (default deprecation)

near-cli v2.0.0 has been published to npm 🎉

In this new version default folder has been deprecated and all example repos should be updated to remove default from config.js and changed to testnet.

@doriancrutcher I grinded through these two tickets this week ( https://github.com/near/devrel/issues/228 https://github.com/near/devrel/issues/218 ) and this ticket is the last one that fixes the deprecation of default networkId. Would you be interesting in helping out and taking this one on?
