Add Posthog web analytics.

Two new environment variables should be set:

• NEXT_PUBLIC_POSTHOG_KEY - this can be found in the Posthog project settings page
• NEXT_PUBLIC_POSTHOG_HOST - the default setting is https://eu.i.posthog.com
