[mocknet] Add ability to specify mocknet-id

This is necessary for mocknet instances of FT benchmark that don't follow the previous naming pattern of "{chain_id}-{height}-{unique_id}".

@marcelo-gonzalez , I wonder if it would make sense to get rid of chain_id, start_height and unique_id arguments altogether in favor of mocknet_id? I've looked at the code and it should be quite trivial. We would only need to change a documentation in a few places.
