Moving Mac OS test into a separate CI Nightly workflow. Continuing to use MATRIX to allow expansion in future

@nagisa what would be a good option to report failures? Email?

I don't know! Whom the email would be sent to? I don't think anybody in particular is super keen on keeping an eye out for this & it has been shown time and time again that having a single person receiving reports doesn't work (see clusterfuzz, nayduck up to about 6 months ago, continuous parameter estimation, etc etc.)
