Cleanup hostnames and DNS entries

Let's normalize the naming used between the docker-compose and DNS naming. Suggest the following:

• otlp-collector
• otlp-frontend
• otlp-backend
• jaeger
• postgresql
• grafana
• grafana-tempo
• graffana-loki
• prometheus
