Fix security vulnerabilities discovered by Trivy #13

Context

We have recently enabled Trivy image scanner to check for security vulnerabilities and there are a handful of CRITICAL alerts that will likely need to be addressed asap.

Value and/or benefit

Scanning for vulnerabilities needs to translate into action.

@dcmcand can you look into this? If not, I can also take a look. Seems like it should be pretty straightforward to implement.
