Feature: Logging #7

It may be useful to have a logging feature as a failsafe - this would make it useful for land-based applications when the tracker can be recovered.

The current tracker doesn't have enough memory for significant data storage so this would have to be a version 2 feature. I have mixed feelings about adding logging capabilities. It would be nice for a backup but if for some reason we lose LoRa contact with a tracker it would be very difficult to retrieve that tracker unless there was a traditional UHF/VHF tracker attached to the turtle in addition to the GNSS/LoRa tracker.
