config: Install buster by default #29

Thanks for the excellent config script. I used it on a new setup yesterday, but noticed it installed stretch, which is out of support. Here's an update to default to buster (current stable).

This will conflict with the richer support for choosing the target release in #27. I just wanted a safer (and more recent) default.

LGTM I think this goes the same direction as some of @jjakob's commits

Of course, bullseye is the current stable, now. :)

My goal here is achieved by 9d4ee65aef637e248d2a5d3b685476b3ab638165 so this can be closed. Thanks for reviewing, @vincele!
