Start using Readthedocs + Sphinx #49

This moves the docs to readthedocs, using sphinx instead of mkdocs. This is basically to adhere to what is used in most other projects.

Doc build works: https://threedi-openapi-client--49.org.readthedocs.build/en/49/

I did an automatic .md -> .rst conversion with pandoc, and exposed the examples/README.md in this repo via a link.

And I removed the annoyingly long descriptions (and icons!) of the GH Actions

This addresses #47 only partially.
