Unable to activate neo4jrb_spatial-1.0.0, because neo4j-5.2.10 conflicts with neo4j (~> 5.0.1) #4

I think we'd be safe changing it to > 5.0.1, its dependencies are stable. Happy to merge a PR if you want to fix and send it over.
