feat: OBS-444 - diode-server: init sentry integration

Initial sentry integration for diode servers with a few basic error reporting to start with:

• panic recovery
• ingestion request validation errors
• redis stream messages handling
• reconciler errors

This is a first batch, we will add more with time.
