Update dependencies for Node and Craft CMS

• chore(deps): Update Node v16 -> v20 - Updated Vite from v2 -> v4.
  • Updated Vite plugins.
  • Replaced mkcert Vite plugin with offical plugin for SSL Cert.
• chore(deps): Update php deps
• chore(deps): Update Craft CMS Vite plugin

Node v16 has its last security patch in 2 months, 11th of September 2023, so upgrading to Node v20 seems logical. Has EOL 30th of April 2026.

Updated Vite-stuff for get rid of vulnerability warnings.

Everything is tested and working locally.
