Add testing of doctest examples in Github actions.
@ryanhammonds - this doesn't need "reviewing" per se, but just wanted to tag you in note that having looked into it for another repository, I here (and analogous PRs on specparam, bycycle) update Github actions to run doctests. Let me know if you have any thoughts on the idea / approach, otherwise this should be ready to merge in.
