Change `histology` to `anat` and mandate at session level. #46

This PR updates the specification to:

1) change the histology name to anat. 2) specify that all datatypes must be stored at the session level. 3) update the logo and example images to reflect this change.

This change requires no test and is a direct change of the documentation. This closes #41 and addresses 3/4 TODOs in #45.
