Fix: pin next-auth version

Why

Login broke on production because of a redeployment. This seems to happen because Vercel runs npm install on deployment, it will automatically update package versions, which can the app to upgrade versions automatically and unpredictably.

What

Pin the next-auth version to the one present in the package.json file.

Notes

We can test on staging whether this version works well and eventually update the pinned version if needed.
