Renamed CO2FootprintObserver to CO2FootprintTextFileObserver in accordance with nextflow TraceFileObserver class.

We also mention this class in the README.md Otherwise LGTM :)

Thanks! Ah true, maybe we can update this when the main concept is ready and also update the other class descriptions that are currently wrong.
