Description of proposed changes

Use zstd compression instead of xz and gzip to be consistent with:

• https://github.com/nextstrain/ncov-ingest/pull/345

Cleanup example data for nextstrain/.github/workflows...pathogen-repo-ci.yaml#L133 and to be consistent with:

• https://github.com/nextstrain/zika/tree/main/example_data
