Create a vignette (or two) of covid19 dataset #44

New dataset added, covid19. It needs a vignette writing before we could release the next version. Would be a great help if someone wants to have a go at it.

Suggestions:

Exploratory data analysis of a few countries
Some timeseries forecasting stuff
Some mapping and or country based visualisation (we've got no mapping stuff in this package so far, and I'm keen on it but I don't know mapping).
