project removals from feedback

Description

❓What: removes some parts of the projects pages following feedback from @jrpearson-nhs and changed the name of one of the classification categories.

🧠Why?: projects were not adding value + needed removing

👨‍💻How?: deleting files, changing yml

• Github Codespaces - 2-core, 4GB RAM, 32GB hard drive
• devcontainer.json describes further settings
