Remove links to nimi-python.readthedocs.io and other nimi-python module specific status #2002

What does this Pull Request accomplish?

This change to README.rst will help prevent users from visiting https://nimi-python.readthedocs.io

As far as I know, we are not maintaining that site. The "Edit on GitHub" link is broken 😮

List issues fixed by this Pull Request below, if any.

I didn't bother creating an issue.

What testing has been done?

I previewed the README.rst on GitHub and clicked through all of the docs links I added. I double-checked that all of the "Edit on GitHub" links redirect back to the appropriate places.

That is correct. The latest version on that site is a simple list of redirects to the new Read The Docs projects. We no longer generate documentation on that old project. It is just an archive of documentation for previous releases.
