What does this Pull Request accomplish?

Update the workflow action ymls to run nimodinst system tests on Linux. We've had Linux support for NI-ModInst for at least a year or two, now.

While I'm in there, update workflow yml arrays to be consistent in their style.

List issues fixed by this Pull Request below, if any.
