Create Dark & Light Theme using CreateContext

theme context working - text colors need to be specified for a theme, with current typography updated to match.
Example of problem: white text is being lost in the 'light theme' and text is not adjusting to match

multiple variants of component created.
light mode is not fully set up; some text is being hidden due to white background applied and components color props not adjusted to account for 2 different themes now
