Confirm support for 1.8.0rc1 #55

Is your feature request related to a problem? Please describe. As an avid dbt-core user, I want dbt-loom to be compatible with dbt-core 1.8.0-rc1.

Describe the solution you'd like Update the version range for dbt-loom to include 1.8.0-rc1, and include this new version in the testing matrix.

Describe alternatives you've considered Go for a walk on the beach. 🏖️

Blocked pending the release of dbt-duckdb 1.8.0. Now that https://github.com/duckdb/dbt-duckdb/pull/342 has been merged, it should be coming soon ™️ . Removing from the 0.5.3 milestone for now.
